Instructions :
1: Heat a large skillet over medium heat. Add the turkey bacon and cook for 5 minutes, or until crisp. Remove from the pan and set on a paper towel to drain.
2: Meanwhile, slice the pita in half and toast in a toaster. Spread the tapenade inside both pita halves. Fill the pita halves with the apricots, tomato, onion, and bell pepper. Add the turkey bacon and the feta cheese.
