Chicken Mango Fajitas

Lean chicken breast delivers plenty of muscle-friendly protein and energizing B vitamins, while mango adds a sweet kick and good amounts of vitamin C. Top with avocado for a creamy finish and a dose of heart healthy monounsaturated fat.

Method :

  • In a small bowl, combine the paprika, garlic powder, onion powder, cumin, salt, and pepper.
  • Heat a skillet over medium-high heat. Add the oil and chicken. Cook for 3 minutes, or until no longer pink. Remove the chicken from the skillet.
  • Add the red and yellow bell peppers. Cook for 2 minutes, stirring often. Return the chicken to the skillet along with the spice mixture and mango. Heat through for 1 minute.
  • Spoon the mixture onto the tortillas and top with the avocado and sour cream, if using.
