Many runners haven’t had lima beans since they were forced to eat them as kids. And that’s too bad, because these bright green beans are rich in fiber and potassium and provide 12 grams of protein per cup.
And, yes, they taste good, too—as long as you prepare them right. Here they get a flavor boost from feta cheese, lemon zest, and fresh herbs. Fresh lima beans are only available a few weeks in the summer, but the frozen variety is a quick and convenient year-round choice
Instructions :
- In a large microwaveable dish, cook the lima beans in the microwave according to package directions.
- Add the bell pepper, olives, feta cheese, oil, lemon zest, and parsley. Season to taste with salt and black pepper. Serve as a side dish or light lunch.
